That restaurant served its first covers on day eighty-nine, roughly six weeks ahead of where the operator expected to land when he took the keys. Nothing exotic did that. The permits went in together, the licensed work went in the right order, and every surprise got priced the week it was found instead of the month after. Running a restaurant is the operator’s job, and making the trades and the city fit inside the lease is the contractor’s, which is a trade worth making whenever the calendar is the one thing you cannot buy more of.
